My Favorite Chili is fast, easy and healthy! You can always jazz it up and make it less healthy, but that’s up to you.
I’ve known Chili to be this recipe since I was a child. Fall always meant Chili and EVERY year on Halloween, we HAD to have Chili. I carried this tradition throughout my kids’ and stepkids’ lives as well.

Recipe
1 lb. ground beef, browned & drained
1 large onion, chopped & browned with ground beef
3 cans stewed tomatoes (I put them in the blender for a few seconds so the tomatoes aren’t so chunky.)
1 package chili mix (you can also add chili powder for an extra pop of taste)
1 can kidney beans
Cook your beef & onion. Drain the fat. Add tomatoes, beans & chili-o mix. Simmer for 40 mins or so.
Serve with crackers, tortilla chips, cheese and/or sour cream!
Warning: they make lots of different kinds of stewed tomatoes. Check your labels! You don’t want the Italian ones!! 😊
When available, I like to use homemade canned tomatoes. Since we’re full time RVing it right now, we don’t have a garden, so canned will have to do!
